As you all know, Daddy and I loves to cook for our family. Everyday we cook our meals from breakfast to dinner. This way we are assure that the foods that we eat are safe and healthy. This is Daddy cooking our breakfast early in the morning, before going to work.

  
Aside from cooking regular home meals, I like cooking pasta on weekends and special occasions like Christmas.


Also, Daddy is now into baking and he’s learning to make pizza, which I really love by the way. He also like to try foreign dishes like Japanese food. However, I know cooking Japanese food is not easy. But Japanese food is really delicious so all the effort will be all worth it. So when I learned that Asian Food Channel (AFC) announced the premiere of Fresh Off Japan!, we are both delighted.

Fresh Off Japan! is a 4-episode series hosted by 2014 Food Hero winner Sarah Benjamin, which will feature the flourishing Japanese food culture in Singapore. Each week, Sarah will unearth the secret behind the classic Japanese cuisine from picking the freshest Japanese ingredients and trying authentic Japanese dishes to meeting renowned chefs in Singapore. What is very exciting is that after meeting the chefs, Sarah will try to master the intricate Japanese cooking techniques with her own modern twist. Sounds really great right? Can’t wait to watch all the four episodes!

That Quaker Oat Champaroda is love right? The whole family will surely like it!


Here's the easy recipe of Quaker Oat Champorado (source).

INGREDIENTS: 
1 1/4 Tbsps. Cocoa powder
7 Tbsps. Quaker Instant Oats
1/8 tsp. salt 3/4 cup water, boiled
1/4 cup low-fat milk, warm

PROCEDURE:
1. In a medium bowl, mix cocoa powder, oats and salt together
2. Pour in water and milk and mix well. 
3. Continue stirring and cooking over a high flame until the porridge thickens.
4. Serve immediately.

Being a mom, I know how important it is to give my family not just yummy, but also healthy and powerful food everyday. However, being a working mom, time is always a constraint. Watching the Power Meal series help me with this time problem. Because each video will come up with a recipe, which incorporates the goodness of oats, developed with the busy everyday life of the Filipinos in mind.

We have our own version of Quaker Power Meals too. My husband loves making what he called healthy Arrozcaldo with, of course, Quaker Oats.


This healthy Arrozcaldo, just like Champorado, is perfect not just for breakfast but also during cold rainy season like now. I also like eating this when I am sick and Daddy is always happy to cook one for me. Sweet hubby right? 

Cooking healthy Arrozcaldo with Quaker Oats is easy. Here's Daddy's recipe (source):

INGREDIENTS: 
250 grams chicken, cooked adobo style, flaked
2 cups rice, soaked in water for about 30 minutes then drained
1 cup Quaker Instant Oats
1 medium-sized onion, minced
thumb-size ginger, minced
3-4 clove garlic minced
1 tbsp turmeric powder
1/8 cup kasubha
¼ cup patis
1 tsp ground pepper
1 liter chicken stock
1 liter water

Toppings (optional):
toasted garlic
onion springs
fried tokwa

PROCEDURE:
1. Sauté onion, garlic and ginger.
2. Add turmeric powder and kasubha, ground pepper and patis.
3. Drop rice and pour chicken stock.
4. Cover and wait for the rice to be cooked (just like cooking the usual plain rice).
5. Pour water and let it simmer for about 10 minutes.
6. Add oatmeal and continue simmer until oatmeal cooks.
7. Place in a bowl then top with adobo flakes, toasted garlic, fried tokwa and spring onion.
Best serve with calamansi.
Optional: You can also add sliced hard boiled eggs as topping.

Daddy also bakes healthy oatmeal cookies for our son's baon.

Sponsored Video: Knorr is Love


This video reminds me of my mother. When I was young, she used to cook for us and make sure we eat well. But now, everything has changed as she’s sick and can no longer cook for us.

No matter what, she inspires me as a mom. To give the best to my family, to my son. With that let me share my own flavor of home.

As a mother, I want only the best for my son.

To start with, I am a working mom. I am out of home from 6 in the morning until 6 in the evening. If I have choice, I prefer to stay at home and take care of my family.

But being a busy working mom does not stop me from taking care of my family and making sure they get to eat safe and healthy home cooked food. I do plan our weekly meal and go to the market once a week to save time.

Oh my family loves to eat. Eating dinner together gives us time to bond and get updates from each other. And what goes well with a good conversation? Good food, of course.

Luckily, my husband loves to cook too. We take turns in cooking our food. We also like experimenting with new dishes and I am thankful our son eats whatever food that’s palatable to his taste. Fortunately, our son is not a picky eater.

Aside from regular dishes, our son loves soup that’s why I make sure to serve soup often. When I run out of soup idea, Knorr saves the day. I mean the dinner.
